A light and flavorful pasta dish made with ripe tomatoes, zucchini, garlic, and herbs, perfect for a quick and healthy dinner.

Ingredients

  • 8 oz spaghetti or pasta of choice
  • 2 medium zucchinis, sliced
  • 2 cups cherry tomatoes, halved
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp red pepper flakes (optional)
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish

Instructions

  1. Cook pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
  3. Add zucchini slices and cook for 3-5 minutes until slightly tender.
  4. Add cherry tomatoes, red pepper flakes, salt, and pepper. Cook for another 5 minutes until tomatoes soften.
  5. Combine cooked pasta with the sauce in the skillet. Toss well to coat evenly.
  6. Garnish with fresh basil or parsley before serving. Enjoy hot!
