- 8 oz spaghetti or pasta of choice
- 2 medium zucchinis, sliced
- 2 cups cherry tomatoes, halved
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp red pepper flakes (optional)
- Salt and pepper to taste
- Fresh basil or parsley for garnish
Instructions
- Cook pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
- Add zucchini slices and cook for 3-5 minutes until slightly tender.
- Add cherry tomatoes, red pepper flakes, salt, and pepper. Cook for another 5 minutes until tomatoes soften.
- Combine cooked pasta with the sauce in the skillet. Toss well to coat evenly.
- Garnish with fresh basil or parsley before serving. Enjoy hot!
Notes
- You can add grated Parmesan cheese for extra flavor.
- Use gluten-free pasta if needed.
- Adjust spice level by adding more or less red pepper flakes.
