- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 1 cup cooked rice (optional)

- 1/2 cup chopped tomatoes
- 1/4 cup chopped cilantro
- Olive oil
Instructions
- Preheat oven to 375°F (190°C).
- Brush bell peppers with olive oil and place cut side up in a baking dish.
- In a skillet, cook ground meat, onion, and garlic until browned.
- Add taco seasoning and cook according to package instructions.
- Stir in cooked rice, tomatoes, and cilantro.
- Spoon mixture into each pepper half, then top with cheese.
- Bake for 25-30 minutes until peppers are tender and cheese is bubbly.
