Instructions
- Heat olive oil in a skillet over medium heat. Add shrimp, garlic, salt, and pepper. Cook until shrimp turn pink and opaque, about 3-4 minutes.
- Warm tortillas in a dry skillet or microwave until flexible.
- In a bowl, combine diced tomatoes, cilantro, red onion, lime juice, salt, and pepper to make the salsa.
- Assemble tacos by placing shrimp in tortillas and topping with fresh salsa.
- Serve immediately with lime wedges and additional cilantro if desired.
