Instructions
- Heat olive oil in a large pot over medium heat.
- Sear beef chunks until browned on all sides.
- Add onion and garlic, cook until fragrant.
- Pour in beef broth and red wine, bring to a boil.
- Add carrots, potatoes, bay leaves, thyme, salt, and pepper.
- Lower heat, cover, and simmer for 2-3 hours until beef is tender.
- Remove bay leaves, garnish with parsley, and serve hot.
