- 4 bone-in or boneless chicken thighs or breasts
- 1 cup long-grain rice
- 1 cup tzatziki sauce (store-bought or homemade)
- 1 cucumber, chopped
- 2 tablespoons fresh dill, chopped
- 1 lemon, sliced
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Place chicken in a baking dish, season with salt and pepper, and drizzle with olive oil.
- Bake for 35-40 minutes until cooked through and golden.
- Meanwhile, cook rice according to package instructions.
- Once ready, drain excess water and fluff the rice.
- In a large bowl, combine cooked rice, chopped cucumber, dill, and half of the tzatziki sauce.
- Serve baked chicken on top of the rice mixture, dollop with remaining tzatziki sauce, and garnish with lemon slices and dill.
Notes
- You can substitute chicken thighs with breasts for a leaner option.
- For extra flavor, marinate chicken in some tzatziki before baking.
- Serve with a side of roasted vegetables or a fresh salad for a complete meal.
