Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Mix flour, baking powder, and salt in a bowl.
- Cream butter and sugar together until light and fluffy. Beat in egg and vanilla.
- Gradually add dry ingredients to wet mixture to form the dough.
- Roll dough into a rectangle, spread raspberry jam evenly over the surface.
- Roll tightly from the longer side to form a log. Slice into 1/2-inch thick cookies.
- Place cookies on prepared baking sheet and bake for 12-15 minutes until golden.
- Mix powdered sugar and lemon juice for glaze. Drizzle over cooled cookies before serving.
