Instructions
- Mix flour, sugar, baking powder, baking soda, and salt in a bowl.
- In another bowl, whisk buttermilk, egg, and vanilla extract.
- Combine wet and dry ingredients until just blended.
- Pour batter onto a greased skillet to form mini pancakes.
- Cook until bubbles form and edges are golden, then flip and cook the other side.
- Assemble each bite with a pancake, a piece of sausage, and cheese, then stack.
- Serve warm with syrup drizzled on top.
