- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 3 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 2 cups chopped peeled apples
- ½ cup caramel sauce
- ¼ cup sea salt or flaky sea salt
- 1 cup sour cream
- ¼ cup powdered sugar
Instructions
- Preheat oven to 325°F (160°C). Combine graham cracker crumbs and melted butter, press into the bottom of a 9-inch springform pan to create crust.
- Beat cream cheese and sugar until smooth, then add eggs one at a time, mixing well. Stir in vanilla.
- Fold in chopped apples and half of the caramel sauce. Pour over crust.
- Bake for 60-70 minutes or until center is almost set. Cool completely.
- Mix sour cream and powdered sugar, spread over cooled cheesecake. Drizzle remaining caramel sauce and sprinkle sea salt on top.
- Chill for at least 4 hours before serving. Garnish with apple slices if desired.

- Use tart apples like Granny Smith for balance of sweetness and tartness.
- Ensure cheesecake is fully cooled to set properly.
- For added flavor, sprinkle with crushed pecans or toffee bits.
