- 3 ripe bananas, mashed
- 1/2 cup (120 ml) melted unsalted butter
- 1 cup (200 g) sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups (250 g) all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 teaspoons ground cinnamon (for swirl)
- 1/4 cup (50 g) brown sugar (for cinnamon swirl)
Instructions
- In a large bowl, mash the bananas until smooth. Add melted butter, sugar, eggs, and vanilla extract, whisking until well combined.
- In a separate bowl, whisk together flour, baking soda, salt, and cinnamon. Gradually fold into the wet ingredients until just combined.
- Mix the brown sugar and cinnamon in a small bowl. Set aside a portion of the batter for layering.
- Pour half of the batter into a greased loaf pan. Sprinkle half of the cinnamon sugar mixture over the batter. Add remaining batter on top, then sprinkle the rest of the cinnamon sugar. Use a knife or skewer to swirl the cinnamon mixture through the batter.
- Bake at 350°F (175°C) for 60-70 minutes, or until a toothpick inserted into the center comes out clean.

- Use very ripe bananas for maximum sweetness and moisture.
- Avoid overmixing to keep the bread tender and fluffy.
- Adjust cinnamon to your taste preferences for a stronger or milder flavor.
