- 1 1/2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1/2 teaspoon vanilla extract
- 1/2 cup mini chocolate chips
- 1/2 cup melted semi-sweet chocolate
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Mix flour, cocoa powder, baking soda, and salt in a bowl.
- In a separate bowl, cream butter and sugar until fluffy. Beat in egg and vanilla.
- Gradually add dry ingredients until combined. Chill dough for 30 minutes.
- Form small balls and flatten them slightly on the baking sheet. Bake for 10-12 minutes.
- Meanwhile, beat cream cheese, powdered sugar, and vanilla until smooth to make cheesecake filling.
- Once cookies are cooled, pipe or spoon cheesecake filling onto centers of cookies.
- Dip tops into melted chocolate and place on a wire rack. Chill until set.
Notes
- Chill dough for better shaping and to prevent spreading during baking.
- You can add chopped nuts or additional chocolate chips to customize.
- Ensure cookies are completely cooled before adding filling to prevent melting.
