- 1 lb chicken breasts or thighs, cut into bite-sized pieces
- 1 cup cornstarch
- 2 large eggs, beaten
- 1 cup all-purpose flour
- Salt and pepper to taste
- Vegetable oil for frying
- 1/4 cup mayonnaise
- 3 tbsp sweet chili sauce
- 2 tbsp Sriracha (adjust to taste)
- 1 tbsp soy sauce
- 1 tsp rice vinegar
- Sesame seeds and chopped scallions for garnish
Instructions
- In a bowl, season chicken pieces with salt and pepper. Dip each piece into beaten eggs, then coat with cornstarch mixed with flour.
- Heat vegetable oil in a deep skillet over medium-high heat. Fry chicken pieces until golden and crispy, about 4-5 minutes. Drain on paper towels.
- In a separate bowl, whisk together mayonnaise, sweet chili sauce, Sriracha, soy sauce, and rice vinegar to make the sauce.
- Toss the fried chicken in the sauce until evenly coated. Garnish with sesame seeds and chopped scallions before serving.
Notes
- Adjust the spiciness by modifying the amount of Sriracha used.
- Serve immediately for maximum crunch and flavor.
- You can bake the chicken for a healthier version: bake at 400°F (200°C) for 20 minutes after coating.
