Instructions
- Heat olive oil in a large pot over medium heat. Add diced onion and cook until translucent.
- Stir in minced garlic and cook for another minute.
- Pour in chicken broth and bring to a boil.
- Add shredded chicken and potato gnocchi to the pot. Cook according to package instructions, usually about 3-4 minutes.
- Reduce heat and stir in heavy cream and dried thyme. Let simmer until heated through.
- Season with salt and pepper to taste.
- Serve hot, garnished with chopped parsley.
