Ingredients

  • 1 lb ground beef
  • 1 cup long-grain rice
  • 1 can (10.5 oz) condensed cream of mushroom or cream of chicken soup
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup milk
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 2 tablespoons chopped fresh parsley (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. Cook rice according to package instructions; set aside.
  3. In a skillet, cook ground beef with chopped onion and minced garlic until browned. Drain excess fat.
  4. In a large bowl, combine cooked rice, cooked beef mixture, soup, half of the shredded cheddar and mozzarella, milk, salt, and pepper. Mix well.
  5. Pour mixture into the prepared baking dish and spread evenly.
  6. Top with remaining shredded cheeses.
  7. Bake uncovered for 25-30 minutes until bubbly and cheese is golden.
  8. Garnish with chopped parsley before serving. Enjoy!
