- 4 slices bacon, chopped
- 1 small onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1 package (16 oz) potato gnocchi
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions
- Cook chopped bacon in a large pot over medium heat until crispy. Remove and set aside.
- In the same pot, sauté diced onion and minced garlic until translucent.
- Add chicken broth and bring to a boil.
- Stir in gnocchi and cook until they float, about 3-4 minutes.
- Reduce heat and stir in heavy cream and shredded cheddar cheese until melted and smooth.
- Season with salt and pepper. Top with cooked bacon and chopped parsley before serving.
Notes
- You can substitute turkey bacon for a lighter option.
- For extra flavor, add a pinch of smoked paprika or cayenne pepper.
