- 6 slices bacon, chopped
- 1 small onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 16 oz potato gnocchi
- 1 1/2 cups shredded cheddar cheese
- Salt and pepper to taste
- Chopped chives for garnish
Instructions
- Cook the chopped bacon in a large pot over medium heat until crispy. Remove and set aside.
- In the same pot, sauté diced onion and minced garlic until translucent.
- Add chicken broth and bring to a simmer.
- Stir in heavy cream and gnocchi, cook until gnocchi float, about 3-4 minutes.
- Lower the heat and add shredded cheddar cheese, stirring until melted and smooth.
- Season with salt and pepper. Top with crispy bacon and chopped chives before serving.
Notes
- For extra flavor, add sautéed mushrooms or fresh thyme.
- Use thick-cut bacon for more smoky flavor.
- This soup is best enjoyed fresh but can be stored refrigerated for up to 2 days.
