- 1 pound Italian sausage
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 (9 oz) package cheese tortellini
- 1 cup diced carrots
- 2 cups chopped spinach
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, cook sausage over medium heat until browned. Remove excess fat.
- Add chopped onion and garlic; cook until fragrant and translucent.
- Pour in chicken broth, add carrots, thyme, basil, salt, and pepper. Bring to a boil.
- Add tortellini and cook according to package instructions until al dente.
- Stir in chopped spinach and cook until wilted.
- Serve hot, garnished with fresh parsley.
Notes
- You can substitute spinach with kale or Swiss chard for added greens.
- Adjust seasoning to taste, adding red pepper flakes for a spicy kick.
