  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. In a large mixing bowl, mash the ripe bananas until smooth. Add the melted butter, sugar, eggs, and vanilla extract. Whisk until well combined.
  2. In a separate bowl, sift together flour, baking soda, salt, and ground cinnamon. Gradually add to the wet ingredients, stirring gently until just combined without overmixing.
  3. Mix the brown sugar and cinnamon for the swirl in a small bowl; set aside.
  4. Pour half of the batter into a greased loaf pan. Sprinkle half of the cinnamon sugar mixture over the batter. Add remaining batter and top with the rest of the cinnamon sugar. Use a butter knife to swirl the mixture gently into the batter.
  5. Preheat oven to 350°F (175°C). Bake for 55-65 minutes, or until a toothpick inserted in the center comes out clean. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
