Ingredients
Scale
- 3 ripe bananas, mashed
- 1/3 cup melted unsalted butter
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 teaspoons ground cinnamon
- For the cinnamon swirl:
- 2 tablespoons brown sugar
- 1 teaspoon ground cinnamon
Instructions
- In a large mixing bowl, mash the ripe bananas until smooth. Add the melted butter, sugar, eggs, and vanilla extract. Whisk until well combined.
- In a separate bowl, sift together flour, baking soda, salt, and ground cinnamon. Gradually add to the wet ingredients, stirring gently until just combined without overmixing.
- Mix the brown sugar and cinnamon for the swirl in a small bowl; set aside.
- Pour half of the batter into a greased loaf pan. Sprinkle half of the cinnamon sugar mixture over the batter. Add remaining batter and top with the rest of the cinnamon sugar. Use a butter knife to swirl the mixture gently into the batter.
- Preheat oven to 350°F (175°C). Bake for 55-65 minutes, or until a toothpick inserted in the center comes out clean. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
- Ensure bananas are very ripe for optimal sweetness and moisture.
- For a dairy-free version, substitute butter with coconut oil or dairy-free margarine.
- You can add chopped nuts or chocolate chips to the batter for extra flavor.
- Store leftovers at room temperature in an airtight container for up to 2 days or refrigerate for longer freshness.
