- 4 large potatoes, diced
- 1 lb smoked sausage, sliced
- 1 cup shredded cheddar cheese
- 1/2 cup ranch dressing
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- Fresh parsley for garnish
Instructions
- Preheat oven to 400°F (200°C). Toss diced potatoes with olive oil, garlic powder, paprika, salt, and pepper.
- Spread potatoes on a baking sheet and roast for 25-30 minutes until crispy and golden.
- While potatoes roast, cook smoked sausage slices in a skillet over medium heat until browned.
- Once potatoes are done, sprinkle with shredded cheese, return to oven for 5 minutes until melted.
- Arrange cheesy potatoes and sausage on a serving dish, drizzle ranch dressing, and garnish with parsley.
Notes
- You can swap smoked sausage for leftover cooked sausage or chicken.
- For extra flavor, add sliced green onions or jalapeños.
