Instructions
- In a mixing bowl, combine mashed potatoes, cheddar cheese, Parmesan cheese, green onions, garlic powder, salt, and pepper.
- Form mixture into small balls or puffs and set aside.
- Prepare three shallow dishes: one with flour, one with beaten eggs, and one with panko breadcrumbs.
- Roll each potato ball in flour, dip in beaten eggs, then coat with panko breadcrumbs.
- Heat vegetable oil in a deep skillet over medium-high heat.
- Fry the puffs in batches until golden brown and crispy, about 3-4 minutes each side.
- Drain on paper towels and serve warm garnished with additional green onions if desired.
