- 1 pound ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup enchilada sauce
- 8 small flour or corn tortillas
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat, sauté diced onion until translucent.
- Add minced garlic and cook for 1 minute.
- Stir in ground beef, cumin, chili powder, salt, and pepper; cook until browned and cooked through.
- Pour in half of the enchilada sauce and stir to combine.
- Spoon beef mixture evenly onto tortillas, roll up and place seam-side down in a baking dish.
- Top with remaining enchilada sauce and sprinkle with shredded cheeses.
- Bake for 20-25 minutes until bubbly and cheese is melted.
- Garnish with chopped cilantro before serving.
Notes
- You can add chopped onions or peppers to customize the flavor.
- Serve with sour cream or sliced jalapenos for extra spice.
