A simple and hearty cheesy ground beef enchiladas cooked all in one pan, loaded with flavorful seasoned beef, cheese, and enchilada sauce, topped with fresh herbs.

  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup enchilada sauce
  • 8 small flour or corn tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat, sauté diced onion until translucent.
  3. Add minced garlic and cook for 1 minute.
  4. Stir in ground beef, cumin, chili powder, salt, and pepper; cook until browned and cooked through.
  5. Pour in half of the enchilada sauce and stir to combine.
  6. Spoon beef mixture evenly onto tortillas, roll up and place seam-side down in a baking dish.
  7. Top with remaining enchilada sauce and sprinkle with shredded cheeses.
  8. Bake for 20-25 minutes until bubbly and cheese is melted.
  9. Garnish with chopped cilantro before serving.
