- 4 slices of hearty bread (sourdough or whole wheat recommended)
- 4 slices of crispy bacon
- 4 large eggs
- 1 cup shredded cheese (cheddar, American, or a cheese blend)
- 2 tablespoons butter
- Salt and pepper to taste
- Optional: chopped fresh herbs (chives, parsley)
Instructions
- Cook the bacon until crispy and set aside. Whisk eggs with salt and pepper in a bowl.
- In a skillet, melt butter over medium heat. Pour in eggs and scramble gently until just cooked. Remove from heat.
- Butter one side of each bread slice. Place two slices buttered side down on a heated skillet.
- Layer shredded cheese, cooked bacon, and scrambled eggs on the bread. Top with remaining bread slices, buttered side up.
- Cook over medium heat for 3-4 minutes per side until golden brown and cheese is melted, pressing gently with a spatula.
Notes
- For extra crispiness, reheat the sandwich in a skillet or toaster oven.
- You can customize with your favorite cheese or herbs for added flavor.
- Best enjoyed fresh, but leftovers can be stored in an airtight container for up to 24 hours.
