  • Total Time: 20 minutes
  • Yield: 2 sandwiches

Ingredients

Scale
  • 4 slices of hearty bread (sourdough or whole wheat recommended)
  • 4 slices of crispy bacon
  • 4 large eggs
  • 1 cup shredded cheese (cheddar, American, or a cheese blend)
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Optional: chopped fresh herbs (chives, parsley)

Instructions

  1. Cook the bacon until crispy and set aside. Whisk eggs with salt and pepper in a bowl.
  2. In a skillet, melt butter over medium heat. Pour in eggs and scramble gently until just cooked. Remove from heat.
  3. Butter one side of each bread slice. Place two slices buttered side down on a heated skillet.
  4. Layer shredded cheese, cooked bacon, and scrambled eggs on the bread. Top with remaining bread slices, buttered side up.
  5. Cook over medium heat for 3-4 minutes per side until golden brown and cheese is melted, pressing gently with a spatula.

Notes

  • For extra crispiness, reheat the sandwich in a skillet or toaster oven.
  • You can customize with your favorite cheese or herbs for added flavor.
  • Best enjoyed fresh, but leftovers can be stored in an airtight container for up to 24 hours.
