Ingredients
Scale
- 8 oz cream cheese, softened
- 1 cup pumpkin puree (canned or fresh)
- 1/2 cup granulated sugar
- 1 teaspoon pumpkin pie spice
- 1 teaspoon vanilla extract
- 2 cups graham cracker crumbs
- 2 cups white or dark chocolate chips (for coating)
- Optional: sprinkles or crushed pecans for garnish
Instructions
- In a mixing bowl, beat the softened cream cheese until smooth. Add the pumpkin puree, sugar, pumpkin pie spice, and vanilla extract. Mix until well combined and creamy.
- Gradually add graham cracker crumbs to the pumpkin mixture until it becomes firm enough to roll into balls. Shape into 1-inch spheres and place on a parchment-lined baking sheet.
- Refrigerate the formed truffles for at least 30 minutes to firm up.
- Meanwhile, melt the chocolate chips in a microwave-safe bowl in 30-second intervals, stirring until smooth.
- Dip each chilled truffle into the melted chocolate, coating evenly. Return to parchment-lined sheet.
- Decorate with sprinkles or crushed nuts if desired. Let the chocolate set at room temperature or in the fridge.
Notes
- Ensure cream cheese is softened for smooth mixing.
- Chilling the truffles helps in achieving a better coat in chocolate.
- Use high-quality chocolate for a glossy finish.
- For extra flavor, add chopped pecans or mini chocolate chips to the filling.
