Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.
- In a separate large bowl, beat butter and brown sugar until fluffy. Mix in egg, apple cider, and vanilla.
- Gradually add dry ingredients to wet mixture until combined.
- Drop spoonfuls onto prepared baking sheets and flatten slightly.
- Bake for 12-14 minutes until edges are golden brown. Cool on wire racks.
- In another bowl, beat powdered sugar, butter, and cinnamon until smooth to make the filling.
- Once cookies are cooled, spread filling between pairs and sandwich together.
Notes
- Chill the dough for 30 minutes for better shaping.
- Use fresh apple cider for the best flavor.
- Decorate with a sprinkle of cinnamon or caramel drizzles if desired.
