  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.
  3. In a separate large bowl, beat butter and brown sugar until fluffy. Mix in egg, apple cider, and vanilla.
  4. Gradually add dry ingredients to wet mixture until combined.
  5. Drop spoonfuls onto prepared baking sheets and flatten slightly.
  6. Bake for 12-14 minutes until edges are golden brown. Cool on wire racks.
  7. In another bowl, beat powdered sugar, butter, and cinnamon until smooth to make the filling.
  8. Once cookies are cooled, spread filling between pairs and sandwich together.
